One of the biggest modern investments in Chile, VIK winery in Cachapoal is an impressive project in a new wine valley in the middle of Cachapoal, the other side of Apalta in Colchagua. The Norwegian Vik family set out to make one of the best wines in the world and decided that this was the spot, purchasing the entire 4,325 hectare valley.
After hundreds of soil studies and plotting out the entire land, the viticulture and winemaking team settled on the best areas and planted almost 400 hectares of vineyards from which they only select the top grapes each year for their one and only wine, VIK. A rich red blend made by winemaker Patrick Valette using Cabernet Sauvignon, Carmenere, Cabernet Franc, Merlot and Syrah, this is the only wine at the moment but one day soon they may be introducing a line below to add to the portfolio.
The winery is state-of-the-art and a beautiful architectural masterpiece, that is perhaps only upstaged by the hotel next door: an artistic, luxury, boutique hotel that offers the most exclusive stay in Chile’s wine valleys. The restaurant in the hotel is also one of the best in the area and worth reserving a table over lunch or dinner to experience local ingredients transformed into beautiful culinary art.
