Silencio, Cono Sur
A medley of cassis & dark plum with peppery spice. If you’ve ever tasted Chilean Cabernet Sauvignon from Alto Maipo, this would be a classic expression of top quality Cabernet from the region.
Don’t let the sweet cassis in the nose fool you, this wine has bones. Smooth, but present, tannins with deep fruit concentration and the necessary acidity to pull you through to the long finish.
Barbecued meats and dark sauces with lean meats.
2011 harvest, 13.5% alcohol, 3.75 PH
This is the result of making top selections from Cabernet Sauvignon vines in Alto Maipo from different sub regions. Cono Sur is a specialist in Pinot Noir, but they wanted to make an icon Cab to add to their portfolio and 2010 was the very first year. 2011 (tasted) was a spectacular Cabernet harvest for Maipo, and the results are present in the wine.
